Ingredients

- 1 lb flank steak
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Season the flank steak with salt, pepper, and dried oregano.
- Heat a grill or skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare.
- Remove the steak from the heat and let it rest for 5 minutes before slicing it thinly.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil and lemon juice, then pour over the quinoa mixture and toss to combine.
- Divide the quinoa mixture into bowls and top with sliced steak.
- Serve immediately and enjoy your healthy steak bowl!

- Feel free to add other vegetables like bell peppers or spinach.
