Ingredients

  • 1 lb flank steak
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Season the flank steak with salt, pepper, and dried oregano.
  2. Heat a grill or skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare.
  3. Remove the steak from the heat and let it rest for 5 minutes before slicing it thinly.
  4. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  5. In a small bowl, whisk together olive oil and lemon juice, then pour over the quinoa mixture and toss to combine.
  6. Divide the quinoa mixture into bowls and top with sliced steak.
