- 1 cup creamy natural peanut butter
- ½ cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 cup almond flour
- Flaked sea salt for topping (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter, maple syrup, and vanilla.
- Stir in the almond flour until fully incorporated.
- Use a medium cookie scoop or spoon to portion the dough onto the prepared baking sheet, rolling into balls if needed.
- Flatten each dough ball with a fork, making a crisscross pattern. Sprinkle flaked sea salt on top if desired.
- Bake for about 12 minutes, or until the cookies begin to brown.
- Remove from oven and allow to cool on a wire rack before serving.
Notes
- For chewier cookies, slightly underbake and allow to finish setting on the baking sheet.
- Store in an airtight container at room temperature for 3–5 days.
- You can add chocolate chips, chopped nuts, or cinnamon for variations.
