Ingredients

  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • Flaked sea salt for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter, maple syrup, and vanilla.
  3. Stir in the almond flour until fully incorporated.
  4. Use a medium cookie scoop or spoon to portion the dough onto the prepared baking sheet, rolling into balls if needed.
  5. Flatten each dough ball with a fork, making a crisscross pattern. Sprinkle flaked sea salt on top if desired.
  6. Bake for about 12 minutes, or until the cookies begin to brown.
  7. Remove from oven and allow to cool on a wire rack before serving.

Notes

  • For chewier cookies, slightly underbake and allow to finish setting on the baking sheet.
