Description

A bowl of Hawaiian pasta salad made with elbow macaroni, shredded carrots, green onions, and a creamy mayonnaise-based dressing, perfect for BBQs.


Ingredients

  • 8 oz rotini pasta
  • 1 cup diced pineapple
  • 1 cup diced ham
  • 1 cup cherry tomatoes, halved
  • 1/2 cup green bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded carrots
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, pineapple, ham, cherry tomatoes, bell pepper, red onion, and carrots.
  3. In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add other vegetables like cucumbers or peas.
  • This salad can be made a day in advance for better flavor.
