Description
A bowl of Hawaiian pasta salad made with elbow macaroni, shredded carrots, green onions, and a creamy mayonnaise-based dressing, perfect for BBQs.
Ingredients

- 8 oz rotini pasta
- 1 cup diced pineapple
- 1 cup diced ham
- 1 cup cherry tomatoes, halved
- 1/2 cup green bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup shredded carrots
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, pineapple, ham, cherry tomatoes, bell pepper, red onion, and carrots.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like cucumbers or peas.
- This salad can be made a day in advance for better flavor.
- Adjust the sweetness by adding more or less honey based on your preference.
