Description

Ingredients

  • Hatch chiles – 4 cups
  • Olive oil – 2 tablespoons
  • Garlic – 3 cloves, minced
  • Onion – 1 medium, chopped
  • Tomatoes – 2 cups, diced
  • Black beans – 1 can, drained and rinsed
  • Chicken or vegetable broth – 4 cups
  • Cumin – 1 teaspoon
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. Roast the hatch chiles until charred, then peel and chop them.
  2. In a large pot, heat olive oil over medium heat.
  3. Add garlic and onion, sauté until translucent.
  4. Stir in the roasted hatch chiles and cook for another 2 minutes.
  5. Add diced tomatoes, black beans, broth, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

  • Adjust the number of hatch chiles based on your spice preference.
  • This recipe can be made vegetarian by using vegetable broth.
