Ingredients
- Hatch chiles – 4 cups

Instructions
- Roast the hatch chiles until charred, then peel and chop them.
- In a large pot, heat olive oil over medium heat.
- Add garlic and onion, sauté until translucent.
- Stir in the roasted hatch chiles and cook for another 2 minutes.
- Add diced tomatoes, black beans, broth, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- Adjust the number of hatch chiles based on your spice preference.
- This recipe can be made vegetarian by using vegetable broth.
