Description

This Ground Beef and Broccoli stir fry is a quick and easy meal, perfect for busy weeknights.


Ingredients

  • 1 tablespoon peanut oil (or vegetable/olive oil)
  • 3 cups broccoli florets, washed and patted dry
  • 1 lb ground beef
  • 1 yellow onion, diced
  • 1 red bell pepper, sliced
  • Salt and white pepper, to taste
  • 2 tablespoons cornstarch + 2 tablespoons cold water
  • 1 cup beef broth
  • ¼ cup soy sauce
  • 3 tablespoons packed brown sugar
  • 12 tablespoons honey (to taste)
  • 2 cloves garlic, minced
  • ½ teaspoon ground ginger
  • 1 teaspoon toasted sesame oil
  • 3 cups cooked rice

Instructions

  1. Mix cornstarch with cold water in a covered container and shake well. Set aside.
  2. In a bowl, combine all remaining sauce ingredients. Start with 1 tablespoon honey and adjust later if needed.
  3. Heat oil over medium heat. Add broccoli and toss to coat. Cook for 4–5 minutes until slightly tender. Remove and set aside.
  4. Season ground beef with salt and white pepper. Cook beef and onion over medium-high heat until browned and fully cooked. Drain excess grease.
  5. Add sliced bell pepper and cook for 1 minute.
  6. Pour in the sauce mixture and bring to a boil. Simmer for 2–3 minutes.
  7. Shake the cornstarch mixture and slowly stir it into the sauce. Let it gently bubble until thickened.
  8. Reduce heat to low. Add broccoli back to the pan and stir until heated through.
  9. Serve over rice and garnish with green onions if desired.

Notes

  • Ground turkey or chicken can be substituted for beef.
  • Frozen broccoli works well—thaw and pat dry first.
  • Optional add-ins: carrots, water chestnuts, celery, kale.
  • Toppings: green onions, chopped peanuts, sesame seeds, sliced almonds, or crunchy chow mein noodles.
  • For lower sodium, use low-sodium soy sauce and broth.
