Description
This Ground Beef and Broccoli stir fry is a quick and easy meal, perfect for busy weeknights.
Ingredients

- 1 tablespoon peanut oil (or vegetable/olive oil)
- 3 cups broccoli florets, washed and patted dry
- 1 lb ground beef
- 1 yellow onion, diced
- 1 red bell pepper, sliced
- Salt and white pepper, to taste
- 2 tablespoons cornstarch + 2 tablespoons cold water
- 1 cup beef broth
- ¼ cup soy sauce
- 3 tablespoons packed brown sugar
- 1–2 tablespoons honey (to taste)
- 2 cloves garlic, minced
- ½ teaspoon ground ginger
- 1 teaspoon toasted sesame oil
- 3 cups cooked rice
Instructions
- Mix cornstarch with cold water in a covered container and shake well. Set aside.
- In a bowl, combine all remaining sauce ingredients. Start with 1 tablespoon honey and adjust later if needed.
- Heat oil over medium heat. Add broccoli and toss to coat. Cook for 4–5 minutes until slightly tender. Remove and set aside.
- Season ground beef with salt and white pepper. Cook beef and onion over medium-high heat until browned and fully cooked. Drain excess grease.
- Add sliced bell pepper and cook for 1 minute.
- Pour in the sauce mixture and bring to a boil. Simmer for 2–3 minutes.
- Shake the cornstarch mixture and slowly stir it into the sauce. Let it gently bubble until thickened.
- Reduce heat to low. Add broccoli back to the pan and stir until heated through.
- Serve over rice and garnish with green onions if desired.
Notes
- Ground turkey or chicken can be substituted for beef.
- Frozen broccoli works well—thaw and pat dry first.
- Optional add-ins: carrots, water chestnuts, celery, kale.
- Toppings: green onions, chopped peanuts, sesame seeds, sliced almonds, or crunchy chow mein noodles.
- For lower sodium, use low-sodium soy sauce and broth.
