- 1 lb flank steak (or ribeye, sirloin)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 6 cups mixed greens (arugula, spinach, or romaine)
- 1 ear corn, grilled and cut off the cob
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup walnuts or pecans, toasted
- 1 avocado, sliced (optional)
- 2 tbsp olive oil (for dressing)
- 1 tbsp honey
- 1 clove garlic, minced
- 1/4 tsp salt (for dressing)
- 1/4 tsp black pepper (for dressing)
Instructions
- In a small bowl, mix olive oil, salt, black pepper, garlic powder, and smoked paprika.
- Rub the mixture onto the steak and let it rest at room temperature for 15–20 minutes.
- Heat a grill or skillet over medium-high heat and cook the steak for 4–5 minutes per side.
- Let the steak rest for 5 minutes, then slice thinly against the grain.
- Lightly brush the corn with olive oil and grill for 8–10 minutes, turning occasionally.
- Let cool, then cut the kernels off the cob.
- In a small bowl, whisk together olive oil, honey, garlic, salt, and black pepper for the dressing.
- In a large bowl, toss the mixed greens, cherry tomatoes, red onion, grilled corn, and walnuts.
- Add the sliced steak on top and drizzle with the dressing.
- Garnish with avocado slices if desired and serve immediately.
Notes
- This salad serves 2–3 people.
- For added flavor, consider adding Gorgonzola cheese.
