Delicious Greek yogurt biscuits that are flaky and light.
Ingredients

- 3 cups all-purpose flour
- 1 tablespoon granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup cold unsalted butter, cut into pieces
- 3/4 cup cold plain Greek yogurt
- 1 large egg, beaten
- 3 tablespoons cold water
- 1 large egg, beaten (for brushing)
Instructions
- Preheat oven to 400°F. Line two large baking sheets with parchment paper.
- In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
- Cut in the cold butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the Greek yogurt, egg, and water.
- Add the wet ingredients to the dry ingredients and stir until the dough just comes together.
- Turn the dough out onto a lightly floured surface and gently knead until it forms a cohesive dough. Do not overwork.
- Roll the dough into a 1-inch thick circle. Cut into rounds with a biscuit cutter or into 2×2-inch squares. Re-roll scraps to use all dough.
- Place biscuits on prepared baking sheets and brush tops with beaten egg.
- Bake for 12–15 minutes, or until golden brown.
Notes
- Store biscuits in an airtight container for up to 3 days.
- These biscuits freeze well. Wrap tightly and freeze for up to 2 months.
