- 1 teaspoon baking soda

- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon

- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract for filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, salt, ginger, cinnamon, and cloves.
- In another bowl, cream butter, brown sugar, and granulated sugar until smooth.
- Add egg, molasses, and vanilla to the sugar mixture, mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Drop tablespoon-sized balls of dough onto a baking sheet.
- Bake for 10-12 minutes until edges are firm.
- Let cookies cool completely.
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Spread cream cheese mixture on the flat side of one cookie and top with another cookie to make a sandwich.
