Description

Delicious funfetti pancakes made from scratch with a sweet vanilla glaze.


Ingredients

Scale
  • 2 + 1/4 cups all-purpose flour
  • 4 + 1/2 teaspoons baking powder
  • 1/3 cup granulated sugar
  • 1/4 teaspoon sea salt
  • 2 large eggs
  • 2 cups milk
  • 1 tablespoon vanilla extract
  • 5 tablespoons melted butter, slightly cooled
  • 2/3 cup rainbow sprinkles (jimmies)
  • 3 cups powdered sugar (confectioners sugar)
  • 4 + tablespoons milk (for glaze)
  • 2 teaspoons vanilla extract (for glaze)

Instructions

  1. Add the powdered sugar, milk and vanilla to a mixing bowl. Whisk until the glaze is smooth without lumps.
  2. In a large mixing bowl, add the flour, baking powder, granulated sugar, and salt. Mix briefly until blended.
  3. In a medium bowl, whisk together the eggs, milk, vanilla, and melted butter.
  4. Add the wet ingredients to the dry ingredients. Mix briefly until blended, taking care not to over mix.
  5. Gently fold the rainbow sprinkles into the pancake batter until just incorporated.
  6. Butter a pancake griddle and heat over medium heat. Ladle pancake batter onto the griddle using a 1/4 measuring cup.
  7. Cook undisturbed for about one minute until the sides begin to look cooked and small bubbles rise to the surface. Flip the pancakes.
  8. Continue cooking until done (about 2 minutes). Remove from heat and butter the griddle again.
  9. Repeat the cooking process with remaining batter.
  10. Optional: Serve pancakes on a cake stand, drizzle with vanilla glaze, and top with more sprinkles and whipped cream.
