- ¾ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp salt
For the Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 3 tbsp unsalted butter (softened)
- 1 ¼ cups powdered sugar
- 1 tsp vanilla extract
For the Fruit Toppings:
- Fresh strawberries (sliced)
- Blueberries

- Mango (peeled and sliced)
- Grapes (halved)
Instructions
- Preheat the oven to 350°F (177°C). Grease a 12-inch pizza pan or line a baking sheet with parchment paper.
- Prepare the cookie dough: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Chill the dough for 15-20 minutes, then press it into the pizza pan, forming a flat, even circle about 9-10 inches wide.
- Bake the cookie crust for 15-17 minutes, or until the edges are lightly golden. Let it cool completely before adding the frosting.
- Make the frosting: In a medium bowl, beat the softened cream cheese and butter until smooth. Add the powdered sugar and vanilla extract, then continue mixing until creamy and well-combined.
- Spread the frosting evenly over the cooled cookie crust.
- Decorate with fresh fruit: Arrange the sliced strawberries, blueberries, kiwi, mango, and grapes on top of the frosted cookie in your desired pattern.
- Chill the fruit pizza for 30 minutes to set the frosting. Slice and serve!
