Fresh Vegetable Tortilla Roll Ups are a delicious and easy-to-make snack or appetizer that combines cream cheese and fresh vegetables wrapped in flour tortillas.

- 4 oz cream cheese, softened
- 1/3 cup mayonnaise
- 1/2 tsp garlic powder
- 1/4 tsp dried dill
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 large flour tortillas (10-inch)
- 1/2 cup shredded cheddar cheese
- 2 tbsp sliced green onions
- 1 cup finely diced vegetables (broccoli, carrots, red bell pepper)
Instructions
- Finely dice broccoli, carrots, and red bell pepper into small pieces for even texture.
- In a bowl, mix softened cream cheese, mayonnaise, garlic powder, dill, salt, and pepper until smooth and creamy.
- Warm tortillas in the microwave for 15–20 seconds to make rolling easier.
- Spread the cream cheese mixture evenly over each tortilla.
- Sprinkle diced vegetables, shredded cheddar, and green onions evenly over the top.
- Roll each tortilla tightly from one edge to the other.
- Secure with toothpicks if needed.
- Chill in the freezer for 20 minutes or refrigerate for several hours to firm up.
- Remove toothpicks and slice into pinwheels. Serve chilled.
Notes
- Dice vegetables very small so the roll-ups hold together well.
- These can be made a day ahead and stored wrapped in the refrigerator.
