Description

Fresh Vegetable Tortilla Roll Ups are a delicious and easy-to-make snack or appetizer that combines cream cheese and fresh vegetables wrapped in flour tortillas.


Ingredients

  • 4 oz cream cheese, softened
  • 1/3 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/4 tsp dried dill
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 large flour tortillas (10-inch)
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp sliced green onions
  • 1 cup finely diced vegetables (broccoli, carrots, red bell pepper)

Instructions

  1. Finely dice broccoli, carrots, and red bell pepper into small pieces for even texture.
  2. In a bowl, mix softened cream cheese, mayonnaise, garlic powder, dill, salt, and pepper until smooth and creamy.
  3. Warm tortillas in the microwave for 15–20 seconds to make rolling easier.
  4. Spread the cream cheese mixture evenly over each tortilla.
  5. Sprinkle diced vegetables, shredded cheddar, and green onions evenly over the top.
  6. Roll each tortilla tightly from one edge to the other.
  7. Secure with toothpicks if needed.
  8. Chill in the freezer for 20 minutes or refrigerate for several hours to firm up.
  9. Remove toothpicks and slice into pinwheels. Serve chilled.

Notes

  • Dice vegetables very small so the roll-ups hold together well.
  • These can be made a day ahead and stored wrapped in the refrigerator.
