- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp dried oregano (or 3 tbsp fresh, chopped)
- 1 tbsp dried basil (or 3 tbsp fresh, chopped)
- Pinch salt
- Pinch pepper
- 1 cucumber, peeled, scored with a fork, and diced
- 1½ cups cherry tomatoes, quartered
- ½ large red onion, finely chopped
- 8 oz fresh mozzarella (pearls halved or torn into pieces)
- Optional: fresh basil for garnish
Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, oregano, basil, salt, and pepper. Set aside to let the flavors meld.
- Place diced cucumber into a medium bowl. Add quartered cherry tomatoes and finely chopped red onion.
- Add bite-sized mozzarella pieces to the bowl with the vegetables.
- Pour the marinade over the salad. Toss well so everything is evenly coated. Let sit for 10 minutes before serving.
- Top with fresh basil if desired and serve.
Notes
- This salad tastes even better after 30–60 minutes in the fridge.
- Omit onion for a milder flavor.
- Use high-quality balsamic vinegar for the best taste.
