Description
French-style beef stew with vegetables is a hearty dish featuring tender beef and assorted vegetables.

- 2 lbs beef chuck, cut into 1.5-inch cubes
- 1 large yellow onion, chopped
- 2 carrots, peeled and sliced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 tablespoons all-purpose flour
- 4 cups beef stock
- 1 bay leaf
- 3 sprigs fresh thyme
- 1 lb cremini mushrooms, halved
- 12 pearl onions, peeled
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large Dutch oven over medium heat.
- Season the beef with salt and pepper. Brown the beef in batches until well seared. Remove and set aside.
- Add onions, carrots, and garlic to the pot. Cook until softened.
- Stir in tomato paste and flour. Cook for 1 minute.
- Return beef to the pot. Pour in beef stock and add bay leaf and thyme.
- Bring to a simmer, then cover and transfer to the oven.
- Bake for 2 hours.
- Add mushrooms and pearl onions. Bake for an additional 30 minutes.
- Stir in butter before serving.
Notes
- Serve with crusty bread for a complete meal.
- This stew tastes even better the next day.
