Description

A comforting dish featuring rice, caramelized onions, and beef flavors.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 large onion, thinly sliced
  • 1 teaspoon sugar
  • 1½ cups long-grain white rice
  • 1 can (10.5 oz) beef consommé
  • 1 can (10.5 oz) French onion soup
  • 1½ cups water
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat. Add the sliced onions and sugar. Cook, stirring frequently, for 25–30 minutes until very soft and deeply caramelized.
  2. While the onions cook, add the rice, beef consommé, French onion soup, water, thyme, salt, and pepper to a greased 9×13-inch baking dish. Stir well to combine.
  3. Spread the caramelized onions evenly over the rice mixture.
  4. Cover tightly with foil and bake at 425°F (220°C) for 30 minutes.
  5. Remove foil, stir the rice, and return to the oven uncovered for another 30 minutes, until the rice is tender and the liquid is absorbed.
  6. Let stand for 5 minutes, fluff with a fork, garnish with fresh thyme or parsley if desired, and serve.

Notes

  • Stirring halfway helps the rice cook evenly and absorb all the flavor.
  • For extra richness, you can add ½ cup shredded Gruyère or mozzarella during the last 10 minutes of baking.
  • This dish pairs perfectly with roasted chicken, beef, or a simple green salad.
