Instructions
- In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, egg, mashed bananas, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter, adjusting the heat as necessary.
- Serve warm with syrup or your favorite toppings.
Notes
- For extra flavor, add a pinch of cinnamon to the batter.
- These pancakes can be frozen and reheated for a quick breakfast.
- Make sure the bananas are very ripe for the best sweetness.
