Description

A rich and decadent flourless chocolate cake topped with smooth chocolate ganache.


Ingredients

  • 1 cup semisweet chocolate chips or chopped chocolate
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large eggs, slightly beaten
  • 1/2 cup Dutch process cocoa powder
  • 1 cup semisweet chocolate chips or chopped chocolate for ganache
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 375°F. Grease an 8-inch round cake pan and line the bottom with parchment paper. Spray again and set aside.
  2. In a large microwave-safe bowl, heat the chocolate and butter for about 1 minute until melted. Stir until smooth. If needed, reheat in 10-second intervals, stirring each time.
  3. Stir in the sugar, salt, and vanilla extract.
  4. Add the eggs and stir until smooth. Add the cocoa powder and mix just until combined. Do not overmix.
  5. Pour batter into the prepared pan. Bake for 25 minutes, until a thin crust forms on top and the center reaches 200°F.
  6. Cool the cake in the pan for 10 minutes. Run a knife around the edges and carefully invert onto a serving plate. Let cool completely.
  7. For the ganache, heat the cream in a microwave-safe bowl for about 30 seconds or until very hot. Add the chocolate and stir until fully melted and smooth.
  8. Spread the ganache evenly over the cooled cake. Let set for a few hours (refrigerate to speed up).
  9. Slice and serve. Optional: dust with powdered sugar and serve with raspberries, whipped cream, or ice cream.
