Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb smoked sausage, sliced
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups okra, sliced
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Stir in flour and cook, stirring constantly, until roux is dark brown.
  3. Add onion, bell pepper, celery, and garlic. Cook until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in sausage and okra. Reduce heat and simmer for 30 minutes.
  6. Add shrimp and Cajun seasoning. Cook until shrimp are pink.
  7. Season with salt and pepper to taste.
  8. Serve over cooked rice.

Notes

  • Adjust spice level by adding more or less Cajun seasoning.
  • Use fresh or frozen shrimp.
  • For a thicker gumbo, allow to simmer longer.
