Description
Crispy rolled tortillas filled with seasoned chicken and cheese.
Ingredients
Scale
- 1 tablespoon olive oil or avocado oil
- 1/2 yellow onion, chopped
- 1 jalapeño, seeded and minced
- 3 cups shredded cooked chicken
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 4 oz mild green chiles
- 1 tablespoon fresh lime juice
- 3 cups shredded cheddar or Mexican blend cheese
- 12 flour tortillas
Instructions
- Preheat oven to 425°F. Place a wire rack on a rimmed baking sheet and spray with nonstick cooking spray.
- In a skillet over medium-high heat, add oil, onion, and jalapeño. Cook until softened, about 4 minutes.
- In a large bowl, combine the cooked vegetables, shredded chicken, cumin, chili powder, salt, garlic powder, paprika, green chiles, lime juice, and cheese. Mix well.
- Warm tortillas in the microwave for about 30 seconds to make them pliable.
- Add about 3 tablespoons of filling to the lower third of each tortilla. Roll tightly and place seam-side down on the wire rack.
- Ensure flautas are not touching. Spray or brush generously with oil.
- Bake for 18–23 minutes, until golden brown and crisp. Broil briefly for extra crispiness if desired.
- Serve with desired toppings.
Notes
- Frying method: Fry in 375°F oil for about 2 minutes until golden brown. Drain on paper towels and keep warm in a 200°F oven.
- Air fryer method: Air fry at 400°F for 7–8 minutes, flipping halfway through.
- Smaller tortillas will yield more flautas with less filling per piece.
