Festive Pumpkin Rice Krispie Donuts are a fun and tasty treat perfect for the fall season.
Ingredients

- 3 tablespoons butter
- 1 (10 oz) bag mini marshmallows
- 1/2 cup canned pumpkin purée (not pumpkin pie filling)
- 1 teaspoon pumpkin pie spice
- Pinch of salt
- 6 cups Rice Krispies cereal
- A few drops of orange food coloring (optional)
- Nonstick spray or butter (for hands and donut pan)
- For the Maple Cinnamon Glaze:
- 3/4 cup powdered sugar
- 2 tablespoons milk (more if needed to thin)
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Prepare the Pan: Spray or grease a donut pan generously. If shaping by hand, grease your hands and work surface.
- Melt Base: In a large pot over medium-low heat, melt butter. Add marshmallows, stirring until nearly melted.
- Add Pumpkin & Spice: Stir in pumpkin purée, pumpkin pie spice, salt, and optional food coloring. Mix until smooth.
- Mix in Cereal: Remove from heat. Fold in Rice Krispies until fully coated.
- Shape Donuts: Press mixture firmly into prepared molds. Let cool completely before removing.
- Make Glaze: Whisk powdered sugar, milk, cinnamon, and salt until smooth. Adjust consistency as needed.
- Glaze & Serve: Dip tops or drizzle glaze over donuts. Let set before serving.
Notes
- Do not overheat marshmallow mixture to keep donuts soft.
- Work quickly once cereal is added to prevent uneven shaping.
- For brighter color, add orange food coloring after pumpkin purée.
- Glaze just before serving for best texture.
- Use silicone molds for easiest release.
