- 1 large onion, sliced
- 1 large bell pepper, sliced (any color)
- 1 cup shredded plant-based cheese (vegan cheddar or mozzarella alternative)
- 1 packet fajita seasoning mix (check for halal-friendly ingredients)
- 1 tbsp olive oil
- 1 cup unsweetened plant-based yogurt (coconut or soy-based)
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Add the sliced onions and bell peppers and sauté for 5–7 minutes until tender.
- Sprinkle the fajita seasoning over the vegetables and stir to coat evenly.
- In a small bowl, mix the plant-based yogurt with a splash of water to loosen it slightly. Pour over the vegetables and stir to combine.
- Transfer the mixture to a baking dish. Top with shredded plant-based cheese.
- Bake in the preheated oven for 15–20 minutes, until the cheese melts and bubbles.
- Garnish with fresh cilantro if desired and serve hot.
