  • 1 packet fajita seasoning mix (check for halal-friendly ingredients)
  • 1 tbsp olive oil
  • 1 cup unsweetened plant-based yogurt (coconut or soy-based)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat. Add the sliced onions and bell peppers and sauté for 5–7 minutes until tender.
  3. Sprinkle the fajita seasoning over the vegetables and stir to coat evenly.
  4. In a small bowl, mix the plant-based yogurt with a splash of water to loosen it slightly. Pour over the vegetables and stir to combine.
  5. Transfer the mixture to a baking dish. Top with shredded plant-based cheese.
  6. Bake in the preheated oven for 15–20 minutes, until the cheese melts and bubbles.
  7. Garnish with fresh cilantro if desired and serve hot.
