A quick and easy egg roll in a bowl recipe. It’s low-carb and keto-friendly.
Ingredients

- 1 lb ground pork
- 1 tsp ginger, minced
- 2 cloves garlic, minced
- 4 cups coleslaw mix
- 3 green onions, sliced
- 3 tbsp soy sauce
- 2 tsp sesame oil
- Salt and pepper to taste
Instructions
- In a large skillet, cook ground pork over medium heat until browned.
- Add ginger and garlic; sauté for 1-2 minutes.
- Stir in coleslaw mix and cook until tender.
- Add green onions, soy sauce, sesame oil, salt, and pepper.
- Cook for another 2-3 minutes, stirring frequently.
- Serve hot.
Notes
- You can substitute ground turkey or chicken.
- Add more vegetables if desired.
- Store leftovers in the refrigerator for up to 3 days.
