Easy Sugar Cookies & Sugar Cookie Frosting

- 1 cup (226 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 ½ teaspoons vanilla extract
- 1 large egg
- 2 ½ cups (315 g) all-purpose flour
- ¾ teaspoon baking powder
- ¾ teaspoon table salt
- 3 cups (375 g) powdered sugar, sifted
- 3–4 tablespoons milk
- 2 tablespoons light corn syrup
- ½ teaspoon vanilla extract
- Gel food coloring (optional)
- Additional candies and sprinkles for decorating (optional)
Instructions
- Combine butter and sugar in the bowl of a stand mixer and beat until creamy.
- Add egg and vanilla extract and beat until combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually stir dry ingredients into wet until dough is smooth.
- Transfer half of the dough onto plastic wrap, cover, and mold into a disk. Chill for 2-3 hours.
- Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
- Dust a surface with flour, roll out one chilled dough disk to desired thickness.
- Cut out shapes with cookie cutters and transfer to the baking sheet.
- Bake for 8-10 minutes until edges are lightly golden.
- Cool cookies completely before decorating.
- For frosting, combine powdered sugar, milk, corn syrup, and vanilla extract in a bowl. Adjust consistency with milk or powdered sugar.
- Color frosting if desired and pipe onto cookies. Decorate with candies.
- Allow frosting to harden before serving or storing.
Notes
- You may reduce vanilla extract and add other extracts like almond or lemon.
- Light corn syrup is recommended for a glossy finish.
