- 1 egg yolk
- ½ cup all-purpose flour

- Pinch of salt
- Zest and juice of 1 fresh lemon
- 1 (21-oz) can lemon pie filling (e.g., Lucky Leaf)
- Powdered sugar (for dusting)
- Vanilla ice cream or whipped cream (optional for serving)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch square (or similar) baking dish.
- In a medium bowl, beat butter, sugar, and egg yolk until light and creamy.
- Add vanilla. Mix in flour, baking powder, and salt on low speed until a thick, smooth dough forms.
- In a separate bowl, stir lemon zest and juice into the lemon pie filling.
- Spread the lemon filling evenly in the baking dish.
- Drop spoonfuls of cookie dough over the top and gently spread without mixing into the filling.
- Bake for 30–35 minutes, until the topping is golden and set.
- Optional: sprinkle coarse sugar on top during the last 5 minutes.
- Let cool slightly. Dust with powdered sugar if desired. Serve warm with vanilla ice cream or whipped cream.
Notes
- Fresh lemon zest and juice balance the sweetness of the canned filling.
- Glass/ceramic pans may need slightly longer bake time than metal.
- Also bakes well in a pie plate or quiche dish.
