Easy Homemade Keto Avocado Oil Mayo


Ingredients

Scale
  • 1.25 cups avocado oil
  • 2 eggs
  • 1/2 tsp sea salt (1/2 to 1 tsp, see instructions)
  • 1 tsp mustard powder
  • 1 tbsp lemon juice (can sub apple cider vinegar)

Instructions

  1. Place all of the mayo ingredients in a pint jar or 2 cup pyrex measuring cup.
  2. Place the immersion blender at the bottom of the container.
  3. Start blending while holding the blender at the bottom.
  4. Don’t move the blender from the bottom until the mayo begins to emulsify and thicken.
  5. Once it starts to thicken, slowly move the immersion blender to the top until all of the oil is completely mixed in.
  6. Taste and season with additional salt, as desired.
  7. Refrigerate immediately and use within two weeks.

Notes

  • This recipe was created specifically to fit a wide mouth pint jar.
  • If you add more salt, be sure to blend the mayo again.
  • Store in refrigerator for up to two weeks.
