- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese
- Optional toppings: sour cream, avocado, cilantro
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add black beans, corn, diced tomatoes, and taco seasoning.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and stir in the heavy cream.
- Simmer for 10 minutes.
- Add shredded cheese and stir until melted.
- Serve hot with your choice of toppings.

- For a vegetarian option, replace ground beef with lentils or beans.
