- 2 cans of corn, drained
- 1 cup sour cream
- 1 cup cream of chicken soup
- 1 cup shredded cheese
- 1/2 cup melted butter
- 1 cup cornmeal
- 1/4 cup sugar
- 2 eggs, beaten
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine corn, sour cream, cream of chicken soup, and melted butter.
- Add in the cornmeal, sugar, and beaten eggs. Mix well.
- Stir in half of the shredded cheese.
- Pour the mixture into a greased baking dish.
- Sprinkle the remaining cheese on top.
- Bake for 45-50 minutes until golden brown.
Notes
- You can substitute cream of chicken soup with cream of mushroom for a vegetarian option.
- Add jalapeños for a spicy kick.
- This casserole can be made ahead of time and refrigerated before baking.
