- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a skillet, heat olive oil over medium heat and brown the beef cubes on all sides.
- Transfer the browned beef to the crockpot.
- Add the potatoes, carrots, onion, and garlic to the crockpot.
- In a bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Pour the broth mixture over the beef and vegetables in the crockpot.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
- Adjust seasoning if necessary before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir it into the stew during the last 30 minutes of cooking.
- Feel free to add other vegetables like peas or green beans for extra nutrition.
- This stew can be stored in the refrigerator for up to 3 days.
