Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, mix almond flour and powdered sugar.
  3. In another bowl, whip egg whites until frothy.
  4. Add granulated sugar gradually, continue whipping until stiff peaks form.
  5. Fold almond mixture into egg whites gently.
  6. Add peppermint extract and food coloring, mix until combined.
  7. Pipe onto a baking sheet lined with parchment paper.
  8. Let the macarons rest for 30 minutes.
  9. Bake for 15-20 minutes, then cool completely.
  10. For filling, beat butter with powdered sugar and peppermint extract until smooth.
  11. Sandwich two macaron shells with filling.
