  • 1 lb frozen chicken dumplings (ensure no pork ingredients)

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add diced onion and cook for about 5 minutes until softened.
  2. Stir in red curry paste, ginger, garlic, and lemongrass. Cook for 1–2 minutes until fragrant.
  3. Pour in chicken broth and coconut milk. Bring to a gentle boil, then reduce to a steady simmer.
  4. Stir in fish sauce and sugar. Add dumplings and cook according to package instructions until heated through.
  5. Turn off heat. Stir in spinach, green onions, and cilantro. Let spinach wilt. Add lime juice and adjust to taste.
  6. Ladle into bowls and top with desired garnishes. Serve hot.
