- 4 tbsp red curry paste
- 14 fl oz full-fat coconut milk
- 1 tbsp olive oil
- 2 tsp sugar
- Juice of ½ lime
- 2 tsp fish sauce
- 1 tbsp chopped lemongrass (optional)
- ½ onion, diced
- 1 cup chopped spinach
- 2 green onions, sliced
- 1 tbsp chopped cilantro
- 1 lb frozen chicken dumplings (ensure no pork ingredients)
Instructions
- Heat olive oil in a large soup pot over medium heat. Add diced onion and cook for about 5 minutes until softened.
- Stir in red curry paste, ginger, garlic, and lemongrass. Cook for 1–2 minutes until fragrant.
- Pour in chicken broth and coconut milk. Bring to a gentle boil, then reduce to a steady simmer.
- Stir in fish sauce and sugar. Add dumplings and cook according to package instructions until heated through.
- Turn off heat. Stir in spinach, green onions, and cilantro. Let spinach wilt. Add lime juice and adjust to taste.
- Ladle into bowls and top with desired garnishes. Serve hot.

- Use dumplings made with chicken or beef only.
- Adjust lime juice and chili crisp to your taste preference.
- Lemongrass adds authentic flavor but can be omitted.
