  • 3 cups heavy cream, divided
  • 1 cup semi-sweet chocolate chips
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup cocoa powder (optional, for garnish)
  • Chocolate shavings or curls (optional, for garnish)

Instructions

  1. Prepare and bake the chocolate cake according to package directions in a 9×13-inch pan. Cool completely, then carefully slice the cake horizontally into two even layers.
  2. Heat 1 cup heavy cream until just simmering. Pour over chocolate chips, let sit 2–3 minutes, then stir until smooth. Cool to room temperature.
  3. Beat the remaining 2 cups heavy cream with powdered sugar and vanilla until stiff peaks form.
  4. Gently fold the cooled ganache into the whipped cream until just combined.
  5. Place one cake layer on a serving plate. Spread half the mousse on top. Add the second cake layer and spread remaining mousse over the top and sides.
  6. Dust with cocoa powder and decorate with chocolate shavings if desired. Refrigerate for at least 2–4 hours before serving.
