- 1 box chocolate cake mix (for a 9×13 cake)
- 3 cups heavy cream, divided
- 1 cup semi-sweet chocolate chips
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder (optional, for garnish)
- Chocolate shavings or curls (optional, for garnish)
Instructions
- Prepare and bake the chocolate cake according to package directions in a 9×13-inch pan. Cool completely, then carefully slice the cake horizontally into two even layers.
- Heat 1 cup heavy cream until just simmering. Pour over chocolate chips, let sit 2–3 minutes, then stir until smooth. Cool to room temperature.
- Beat the remaining 2 cups heavy cream with powdered sugar and vanilla until stiff peaks form.
- Gently fold the cooled ganache into the whipped cream until just combined.
- Place one cake layer on a serving plate. Spread half the mousse on top. Add the second cake layer and spread remaining mousse over the top and sides.
- Dust with cocoa powder and decorate with chocolate shavings if desired. Refrigerate for at least 2–4 hours before serving.
Notes
- Chill overnight for the best texture and clean slices.
- Use a serrated knife dipped in warm water for easier cutting.
- Cake can be made a day ahead and kept refrigerated.
