Delicious and rich buckeye cookies with a chocolate and peanut butter flavor.
Ingredients

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 cup graham cracker crumbs
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix peanut butter and softened butter until smooth.
- Add powdered sugar, graham cracker crumbs, and vanilla. Mix until combined.
- Form the mixture into small balls and place on a baking sheet.
- Chill the balls in the refrigerator for 30 minutes.
- Melt chocolate chips and vegetable oil in a microwave-safe bowl.
- Dip each chilled ball into the chocolate mixture, covering completely.
- Place back on the baking sheet and let the chocolate set.
Notes
- Store cookies in an airtight container.
- Use dark chocolate for a richer flavor.
- Adjust sweetness by adding more or less powdered sugar.
