Decadent Baileys Irish Cream Chocolate Chip Cookies

- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 1 large egg
- ½ cup heavy cream
- 1 teaspoon instant coffee powder (optional, for depth of flavor)
- 2 teaspoons vanilla extract
- 2½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Beat butter, brown sugar, and granulated sugar until light and creamy.
- Mix in the egg, heavy cream, vanilla, and instant coffee powder (if using) until smooth.
- Whisk flour, baking soda, and salt in a separate bowl. Gradually mix into wet ingredients until just combined. Fold in chocolate chips.
- Scoop heaping tablespoons onto the baking sheet. Bake 10–12 minutes, until edges are lightly golden. Cool briefly before transferring to a wire rack.
Notes
- For softer cookies, slightly underbake and allow them to finish setting on the pan.
- Instant coffee enhances flavor but doesn’t make the cookies taste like coffee.
