Decadent Baileys Irish Cream Chocolate Chip Cookies


Ingredients

  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg
  • ½ cup heavy cream
  • 1 teaspoon instant coffee powder (optional, for depth of flavor)
  • 2 teaspoons vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Beat butter, brown sugar, and granulated sugar until light and creamy.
  3. Mix in the egg, heavy cream, vanilla, and instant coffee powder (if using) until smooth.
  4. Whisk flour, baking soda, and salt in a separate bowl. Gradually mix into wet ingredients until just combined. Fold in chocolate chips.
  5. Scoop heaping tablespoons onto the baking sheet. Bake 10–12 minutes, until edges are lightly golden. Cool briefly before transferring to a wire rack.

Notes

  • For softer cookies, slightly underbake and allow them to finish setting on the pan.
  • Instant coffee enhances flavor but doesn’t make the cookies taste like coffee.
