Ingredients

  • 2 large cucumbers
  • 1 cup cherry tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped

Instructions

  1. Wash and slice the cucumbers into thin rounds.
  2. Halve the cherry tomatoes and add them to a large mixing bowl.
  3. Add the chopped red onion and fresh dill to the bowl.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  5. Pour the dressing over the cucumber mixture and toss gently to combine.
  6. Sprinkle the feta cheese on top before serving.

Notes

  • For a vegan option, omit the feta cheese.
  • Let the salad sit for 10 minutes before serving to enhance the flavors.
