A refreshing Cucumber Radish Salad that combines crisp vegetables with a light dressing.
Ingredients

- 4 mini or Persian cucumbers
- 8 radishes (one bunch)
- 2 green onions, thinly sliced
- 1 tablespoon fresh dill, roughly chopped
- 2 tablespoons olive oil
- 1 ½ tablespoons lemon juice (about half a lemon)
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Slice the vegetables: Thinly slice the cucumbers and radishes using a knife or mandoline. Add the sliced vegetables to a medium mixing bowl along with the green onions and dill.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Combine and serve: Pour the dressing over the vegetables and toss gently to coat. Transfer to a serving bowl and adjust seasoning with extra salt and pepper if desired.
