Description

A refreshing salad featuring cucumber, avocado, and feta.


Ingredients

  • 1 large seedless cucumber, chopped
  • 3 large avocados, pitted and chopped
  • Juice of 1 lemon
  • ⅓ cup crumbled feta cheese
  • 1 Tbsp finely chopped fresh dill
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine the cucumber, avocado, lemon juice, feta, and dill.
  2. Gently toss until everything is evenly coated.
  3. Season with salt and black pepper to taste.
  4. Serve immediately.

Notes

  • This salad is best enjoyed the same day it’s made, as the avocado will brown over time.
  • For extra brightness, add a drizzle of olive oil or a little extra lemon juice just before serving.
