Ingredients
4 boneless, skinless chicken breasts
1 sleeve Ritz crackers, crushed
1 cup grated Parmesan cheese
1 tablespoon dried parsley
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise or sour cream (your choice)
2 tablespoons Dijon mustard (optional for extra flavor)
2 tablespoons melted butter
Instructions
Prep the Chicken: Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper. Place the chicken breasts on a cutting board, and if needed, tenderize them to an even thickness for cooking.
Crack the Crackers: In a large bowl, crush the Ritz crackers until fine crumbs form. Stir in the Parmesan cheese, dried parsley, garlic powder, salt, and pepper.
Coat the Chicken: In a small bowl, mix the mayonnaise (or sour cream) and Dijon mustard until well combined. Brush this mixture over the chicken breasts. It’ll create a creamy coating that helps the crackers stick.
Dredge in Cracker Coating: Dip each chicken breast into the crushed Ritz cracker mixture, making sure both sides are evenly coated.
Bake: Place the coated chicken breasts into the prepared baking dish. Drizzle the melted butter over the top of each piece to add extra crispiness.
Cook: Bake for 25-30 minutes, or until the chicken is golden and crispy and reaches an internal temperature of 165°F (75°C).
