- ½ cup (113 g) unsalted butter, softened
- ⅓ cup (80 ml) vegetable or canola oil
- ½ cup (100 g) granulated sugar
- ¼ cup (30 g) powdered sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2 ⅓ cups (280 g) all-purpose flour
- ¼ teaspoon salt
- 1 teaspoon baking powder
- 5 tbsp (70 g) butter for filling
- ⅔ cup (135 g) brown sugar
- 1 ¼ cup (150 g) chopped pecans
- 1 tsp vanilla extract for filling
- ⅓ cup (80 ml) heavy cream
- ¼ tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt for filling
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, oil, granulated sugar, and powdered sugar until smooth.
- Add the egg and vanilla extract, mixing until combined.
- Mix in the flour, salt, and baking powder until a soft dough forms.
- Scoop 9 equal-sized dough balls onto the prepared baking sheet.
- Gently flatten each dough ball to about 1 inch thick.
- Press down the center of each cookie to create a well for the pecan pie filling.
- Bake for 8–9 minutes, then allow cookies to cool on the baking sheet.
- In a medium saucepan, melt the butter with the brown sugar over medium heat.
- Add the chopped pecans and stir to coat.
- Remove from heat and whisk in the heavy cream, vanilla extract, cinnamon, nutmeg, and a pinch of salt until smooth.
- Spoon the pecan pie filling into the center of each cooled cookie.
- Let the cookies cool for 20–30 minutes to allow the filling to set.
- Serve and enjoy!
Notes
- Cookies freeze well up to 2 months. Layer with parchment paper in an airtight container.
- Thaw at room temperature and microwave 10–15 seconds for gooey filling.
- Cookies are done when edges are set and centers are slightly soft; they firm as they cool.
- Bake cookies ahead of time and add filling on serving day for best texture.
- For smaller cookies, reduce baking time and amount of filling accordingly.
