Description
Deliciously soft and chewy iced oatmeal cookies topped with a sweet glaze.

- 1/2 cup butter, softened
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg, at room temperature
- 1 1/4 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/4 tsp cinnamon
- Pinch of nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup powdered sugar
- 1.5 tbsp milk (adjust for consistency)
- 1/4 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until fully incorporated.
- Stir in the oats, flour, cinnamon, nutmeg, baking soda, and salt until evenly combined.
- Using a large cookie scooper, portion out 8 cookie dough balls and place them on the prepared baking sheet. Gently press each to about 1 inch thick.
- Bake for 10 minutes, making sure not to overbake. Cookies should remain soft and slightly gooey.
- Allow the cookies to cool on the baking sheet for 20 minutes, then transfer to a wire cooling rack to cool completely.
- In a medium bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust consistency by adding 1 tsp milk at a time if needed.
- Dip the tops of cooled cookies into the glaze, place back on the cooling rack, and let set before serving.
Notes
- Butter should be softened but not melted to ensure proper texture.
- If glaze is too thin, chill for 10–15 minutes and re-whip until creamy.
