- 3 pounds beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 6 hoagie rolls
- 6 slices provolone cheese
Instructions
- Place the beef chuck roast in the crockpot.
- Add sliced onion and minced garlic on top of the roast.
- In a bowl, mix together beef broth, water, Worcestershire sauce, thyme, salt, and pepper.
- Pour the broth mixture over the roast and onions in the crockpot.
- Cover and cook on low for 8 hours or until the beef is tender.
- Remove the beef from the crockpot and shred it with two forks.
- Return the shredded beef to the crockpot and stir to combine with the juices.
- To serve, place the shredded beef on hoagie rolls, top with provolone cheese, and serve with a side of the broth for dipping.
Notes
- For extra flavor, add sliced bell peppers or mushrooms to the crockpot.
- Serve with a side of chips or a salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
