Ingredients

- 2 lbs chicken breast
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can diced tomatoes (14.5 oz)
- 2 tablespoons fajita seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Tortillas for serving
Instructions
- Place the chicken breast in the crockpot.
- Add the sliced bell pepper and onion on top of the chicken.
- Pour the diced tomatoes over the vegetables.
- Sprinkle the fajita seasoning, salt, and pepper over the mixture.
- Drizzle olive oil on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything together.
- Serve in tortillas with your favorite toppings.
Notes
- For a spicier version, add jalapeños.
- Can substitute chicken with beef or shrimp.
