Ingredients

- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 2 cups egg noodles
- Salt to taste
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the chicken broth, carrots, celery, onion, garlic, thyme, parsley, and black pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once the chicken is cooked, shred it with two forks and return it to the soup.
- Add the egg noodles and cook on high for an additional 30 minutes, or until the noodles are tender.
- Season with salt to taste before serving.
Notes
- For a richer flavor, use homemade chicken broth.
- Feel free to add other vegetables like peas or corn.
- This soup can be stored in the refrigerator for up to 3 days.
