- 2 cups cooked chicken, shredded
- 4 cups corn (fresh, frozen, or canned)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 medium potatoes, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In the crockpot, combine the shredded chicken, corn, diced onion, minced garlic, chicken broth, diced potatoes, salt, pepper, and paprika.
- Stir the ingredients together until well mixed.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream.
- Once cooked, taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For a thicker chowder, mash some of the potatoes before adding the cream.
- This recipe can be made ahead of time and stored in the refrigerator for up to 3 days.
- Leftovers can be frozen for up to 2 months.
