- 2 lbs boneless, skinless chicken breasts
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 1 cup onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 package refrigerated pie crusts
Instructions
- Place the chicken breasts in the bottom of the Crock Pot.
- Add the carrots, celery, peas, and onion on top of the chicken.
- In a bowl, mix together the chicken broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper.
- Pour the mixture over the chicken and vegetables in the Crock Pot.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once cooked, shred the chicken with two forks and stir to combine.
- Transfer the mixture to a baking dish and top with pie crusts.
- Bake in a preheated oven at 425°F (220°C) for 15-20 minutes or until the crust is golden brown.
Notes
- For a healthier option, you can use whole wheat pie crusts.
- Feel free to add other vegetables like corn or green beans.
