Description

Crock Pot Chicken Pot Pie is a comforting and hearty dish that combines tender chicken, vegetables, and a creamy sauce, all topped with flaky pie crust.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 package refrigerated pie crusts

Instructions

  1. Place the chicken breasts in the bottom of the Crock Pot.
  2. Add the carrots, celery, peas, and onion on top of the chicken.
  3. In a bowl, mix together the chicken broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper.
  4. Pour the mixture over the chicken and vegetables in the Crock Pot.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  6. Once cooked, shred the chicken with two forks and stir to combine.
  7. Transfer the mixture to a baking dish and top with pie crusts.
  8. Bake in a preheated oven at 425°F (220°C) for 15-20 minutes or until the crust is golden brown.

Notes

  • For a healthier option, you can use whole wheat pie crusts.
  • Feel free to add other vegetables like corn or green beans.
