- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup chopped green onions
- Oil for frying
Instructions
- Grate the zucchinis and place them in a bowl. Sprinkle with salt and let sit for 5 minutes.
- After 5 minutes, squeeze out excess moisture from the zucchinis.
- In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and green onions.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the skillet and flatten them slightly.
- Cook for 3-4 minutes on each side until golden brown and crispy.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.

- For a gluten-free option, substitute all-purpose flour with almond flour.
- These fritters can be baked instead of fried for a healthier version.
