- 5 chicken thighs bone-in, skin-on
- 2 teaspoons baking powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Preheat the oven to 425 degrees. Use convection or air fryer setting if possible. Line a baking sheet with parchment paper or aluminum foil sprayed with cooking oil.
- Dry chicken thighs with paper towels to remove moisture.
- Mix baking powder, paprika, garlic powder, salt, and pepper in a bowl.
- Rub the spice mix evenly over each thigh.
- Lay chicken thighs on the pan, leaving space between each piece.
- Bake for 30-40 minutes, checking for doneness at 25 minutes if using boneless thighs.
- Ensure internal temperature of 165 is reached. Baste with pan juices.
Notes
- Do not use baking soda instead of baking powder.
- For extra crispiness, broil for a minute or two, watching closely.
- Cooking on a wire rack allows juices to drip down but can alter crispiness.
