Description
Crispy Blueberry Grilled Cheese is a unique twist on a classic sandwich. It combines creamy cheeses and sweet blueberry jam for a delightful flavor.

- 1 pint fresh blueberries
- 1/4 cup sugar
- Juice of 1 lemon
- 1 small bundle lemon thyme, tied with twine
- 8 slices sourdough bread (about 1/4-inch thick)
- 4 oz mozzarella cheese, shredded
- 4 oz white cheddar cheese, grated
- 4 tbsp butter
- Flaky sea salt, for finishing
Instructions
- In a saucepan over medium-high heat, combine blueberries, sugar, lemon juice, and the bundled lemon thyme.
- Bring to a boil, then reduce to medium-low and simmer for 10 minutes.
- Lower heat and continue simmering another 10 minutes, stirring often, until thickened.
- Remove and discard the thyme bundle. Let the jam cool for 10 minutes.
- Lay out 4 slices of bread. Spread a generous layer of the blueberry jam on each slice.
- Evenly sprinkle mozzarella and white cheddar over the jam.
- Top with remaining bread slices to form sandwiches.
- Heat a skillet over medium heat and melt 2 tablespoons of butter.
- Place two sandwiches in the skillet, cover, and cook for 2–3 minutes until golden.
- Flip and cook another 2–3 minutes until cheese is melted.
- Repeat with remaining butter and sandwiches.
- Cut sandwiches in half and sprinkle lightly with flaky sea salt and extra thyme leaves if desired.
Notes
- Allow the jam to cool slightly so it doesn’t make the bread soggy.
- Cook on medium heat to avoid burning the bread before the cheese melts.
- Extra thyme leaves add a fragrant finish.
