Crispy Air Fryer Zucchini is a delicious and healthy snack or side dish.

- 4 medium zucchinis (about 1.5 lb / 680 g)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ¼ tsp salt (or to taste)
- ¼ tsp black pepper (or to taste)
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Wash and dry the zucchinis. Trim off the ends and slice into ¼-inch (0.6 cm) rounds.
- In a large mixing bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
- Add the zucchini slices and toss until evenly coated with the seasoning mixture.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Arrange the zucchini slices in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
- Air fry for 12–15 minutes, shaking the basket halfway through, until the zucchini is golden brown and crispy.
- If using Parmesan, sprinkle it over the zucchini during the last 2 minutes of cooking.
- Remove from the air fryer and let cool slightly before serving.
Notes
- Add red pepper flakes for heat or Italian seasoning for extra flavor.
- Parmesan is optional but adds a great savory crunch.
- Serve with marinara, ranch, garlic yogurt sauce, or aioli.
- Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the air fryer for best texture.
