A creamy and flavorful pasta salad with street corn.


Ingredients

  • 8 oz pasta
  • 2 cups corn kernels
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup lime juice
  • 1/2 cup chopped cilantro
  • 1/2 cup diced red onion
  • 1 tsp chili powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook pasta according to package instructions.
  2. Drain and let cool.
  3. In a large bowl, mix corn, mayonnaise, sour cream, lime juice, cilantro, red onion, chili powder, salt, and pepper.
  4. Combine the cooled pasta with the corn mixture.
  5. Toss well to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
