A creamy and flavorful pasta salad with street corn.
Ingredients

- 8 oz pasta
- 2 cups corn kernels
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup lime juice
- 1/2 cup chopped cilantro
- 1/2 cup diced red onion
- 1 tsp chili powder
- Salt to taste
- Pepper to taste
Instructions
- Cook pasta according to package instructions.
- Drain and let cool.
- In a large bowl, mix corn, mayonnaise, sour cream, lime juice, cilantro, red onion, chili powder, salt, and pepper.
- Combine the cooled pasta with the corn mixture.
- Toss well to coat.
- Chill in the refrigerator for at least 30 minutes before serving.

- Adjust spices to your taste.
- Can be made a day in advance.
