Description

A quick and easy recipe for creamy chicken and rice made in the Instant Pot, perfect for a weeknight dinner.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add diced chicken and cook until browned.
  4. Stir in rice, chicken broth, and season with salt and pepper.
  5. Close the lid and set to manual high pressure for 10 minutes.
  6. Once done, quick release the pressure and stir in heavy cream and frozen peas.
  7. Serve warm and enjoy!
