Ingredients

  • Salt and black pepper, to taste
  • 3 teaspoons Italian seasoning
  • ⅓ cup all-purpose flour
  • 4 tablespoons Parmesan cheese, shredded
  • 3 tablespoons olive oil
  • 2 ½ cups chicken broth
  • 1 beef bouillon cube (or 1 teaspoon Better Than Bouillon)
  • 1 teaspoon low-sodium soy sauce (or Worcestershire sauce)
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon mustard powder
  • 3 tablespoons butter
  • 10 whole garlic cloves
  • 3 tablespoons flour
  • ½ cup heavy cream
  • ½ cup Parmesan cheese (optional, for extra richness)

Instructions

  1. In a large measuring cup, whisk together chicken broth, bouillon cube, soy sauce, onion powder, mustard powder, and thyme. Set aside.
  2. On a plate, combine flour and shredded Parmesan cheese.
  3. Measure all remaining ingredients before cooking.
  4. Slice chicken breasts lengthwise into 2–3 thinner pieces.
  5. Cover with plastic wrap and pound to an even thickness (about ½ inch).
  6. Pat completely dry and season both sides with Italian seasoning, salt, and pepper.
  7. Dredge chicken in the flour-Parmesan mixture, shaking off excess.
  8. Heat olive oil in a large skillet over medium-high heat.
  9. Sear chicken in batches for 4–5 minutes per side, until golden brown.
  10. Remove chicken and set aside.
  11. Reduce heat to medium-low and melt butter in the same skillet.
  12. Use a spatula to scrape up the browned bits from the pan.
  13. Add whole garlic cloves and cook for 6–7 minutes, until softened and lightly caramelized.
  14. Stir in flour and cook for 1–2 minutes to remove the raw flour taste.
  15. Slowly add the broth mixture in splashes, stirring continuously until smooth.
  16. Stir in heavy cream. Bring to a gentle boil, then reduce heat to low.
  17. Gradually mix in Parmesan cheese, if using.
  18. Return chicken to the skillet along with any juices.
  19. Spoon sauce over the chicken.
  20. Cover partially and simmer for 5 minutes.

Notes

  • Serve with mashed potatoes, rice, or pasta.
  • Pair with roasted green beans or broccoli.
  • Garnish with fresh parsley if desired.
  • If chicken breasts are small, use 3–4 pieces instead of 2 large.
  • Mushrooms are a great addition—sauté separately and stir into the sauce at the end.
  • For lower sodium, reduce or omit the bouillon cube.
  • Refrigerate in an airtight container for up to 3 days.
